My brewing has taken a break due to other activities occupying most of my time but at last we are back in business. While I do plan on making a nice batch of bourbon barrel beer, that will need to wait until the cooler weather. Instead we are focusing on brewing kombucha. My goal isn’t exactly the kombucha, however, it’s to reproduce a drink that is more like soda; a naturally fermented kombucha/ginger ale hybrid. This is not my first attempt. That was a failure but my mama didn’t raise a quitter.
Brewing kombucha requires something called a SCOBY. That’s the blob you see in the two top images. It looks disgusting, doesn’t it? It’s alive and needs sweetened tea in order to grow, That’s why I had to brew up some tea. We don’t want the SCOBY getting angry, after all.
I am a bit concerned that it may have started out being angry. The poor thing was sitting in a hot mailbox for an hour before I realized it had been delivered. Then I probably angered it further by popping it into the refrigerator until I had the sweetened tea ready. Hopefully I have appeased the Blob Monster and it will do it’s thing, turning the tea into kombucha.
Let’s hope Mr. SCOBY doesn’t decide to outgrown his container, slither out, and seek his revenge.
