Last weekend we celebrated Mother’s Day. Having an aversion to crowded, overpriced restaurants (and on Mother’s Day, they all are!) and not trusting the menfolk to do a varied brunch with much success*, I decided to take matters into my own hands and create a Mother’s Day brunch.
I decided to clone the brunch we had for my daughter’s baby shower, modified slightly to suit the local tastes so our menu was:
- Belgium waffles
- Carrot bread French toast
- Corncakes with crumbled bacon
There was one slight flaw in the plan – I’ve been sticking to a low carb diet because I really need to lose weight and the only hope I have of not feeling like I’m starving all day is to cut carbs. But it was Mother’s Day, darn it! I deserved to indulge! I was entitled to!
I came up with a plan. I made low carb versions of the waffles and French toast. The waffles were made with coconut flour. The French toast with a buttermilk almond carrot bread recipe I sort of made up. (I did cheat because there is no substitute for corn.)
Did my waffles and French toast taste like what the rest of my family had to eat? No, but it was close enough. I got to stuff my face along with everyone else and (mostly) stick to my diet plan. The bread came out so good that I made 2 loaves: one carrot and one plain.
I’m quite certain those Mimosas didn’t have any carbs. (Hey, even with them, I still reduced the carb intake by like 80% of what it would have been. I can still feel virtuous.)
* No disrespect meant for the menfolk in this household but my husband can barely crack an egg open.
