Homemade pancetta. Eating that is definitely the best of times. Finding out you just used your last piece of homemade pancetta – the worst of times. I mean just look at this fried goodness:

Who knew homemade pancetta would taste so much better than store bought? And it’s cheaper. Tonight it made an appearance in penne ala vodka – except without the vodka. Okay, and I didn’t use penne, either. So it was more like pasta with a tomato cream sauce tossed with pancetta.
Running out of pancetta means we will have to make more. The sad part is that won’t happen until school is out since my time is currently not my own. Not that I’m complaining, mind you. I love getting to bond with my grandson while his mama works. But let me tell ya, when you’re this.close to 60… Let’s just say it’s not the same as when I had my own little ones 3 decades ago.
On a completely different note, don’t y’all get spoiled with these daily blog posts. I never intended to write every day. It sorta just happened. I cannot guarantee it will continue.
